This recipe is perfect for a big comfy meal especially as the nights start to get a bit cooler. It’s a variation on Sheppard’s or cottage pie, which uses cauliflower instead of potatoes, which is great for keeping carbohydrate intake lower at evening meals. I’ve had dinner guests wolfing this down and suddenly stopping and, confused, saying “I thought you didn’t eat potatoes?” They can’t believe I’ve served them “mash potatoes” made out of cauliflower.
Go ahead . . . try it . . . surprise yourself.
